"The immediate object of the investigation is to obtain a more thorough knowledge concerning the character and properties of the proteins of fish muscle tissue from the standpoint of pure science; the ultimate purpose is both scientific and commercial, in that the knowledge thus gained may throw some light upon processes concerned with the preservation and curing of fish for food purposes. Haddock muscle only has been used in this investigation"--Page [1].
