"The ultimate object of the work on decomposition is to find a quick, simple, and effective means to gauge the stage to which the processes of decomposition have gone on in individual fishes under various conditions of storing and curing. Having established a definite criterion by which to gauge the extent of these decomposition processes, then constructive and result-bringing work could be done upon the mechanisms which hinder or speed up this decomposition and thus enable the industry to be shown how best to treat their product in order to insure a good article being offered to the public both at home and in outside markets"--page 1.
