"The production of mushrooms for the fresh market is subject to the problems of fitting variable production to the market demands. In periods of high production mushrooms are often wasted for lack of market. Some of the excess material is sold at lower prices to canners. Drying has been suggested as one route which would be suitable for the use of excess production. Dried mushrooms are popular in Europe and the Orient and are presently available in specialty shops in Canada"--Introduction, page [1].
