"The Ottawa Texture Measuring System (OTMS), introduced in 1971, was developed to provide a general purpose system for measuring the mechanical and rheological properties of food and agricultural products. The system comprises of an electric motor driven press, an electronic system for recording force deformation and time and a selection of test cells to handle various types of tests on a range of products undergoing linear deformations at a constant rate. By selecting components of the system it can be arranged to have the operational flexibility required for research applications"--Introduction, page [1].
