“There is limited information available about the structure of the Canadian grain milling industry, although there are a considerable number of narratives available outlining the technical aspects of the milling process. This paper attempts to fill this void. The orientation of this analysis is the milling industry from a marketing/consumption viewpoint, somewhat different than the typical approach of sectoral studies which often focus on industries from an industrial organization perspective”--Preface.
