"The F.M.C. pea tenderometer estimates the maturity of peas by recording their tenderness. A set of blades is driven through a matching set to compress shear and extrude the peas. The force required to perform this operation is indicated by a pendulum attached to the matching set of blades which are able to pivot"--Introduction, page [1].
