"Sales of certified organic food occur through a variety of channels. Claims are made that sales are growing by over 20% a year with a steady increase in the proportion of sales through mainstream markets. Correspondingly the proportion through the traditional ‘organic’ channels, such as the natural food stores, directly to consumers through box programs, farmers’ markets or at the farm gate, is believed to be decreasing. Now, for the first time, accurate information is available on the sales of certified organic product through grocery supermarkets in Canada"--Background, p. 3.
